Answer: Offset/Opaque!
Think of Offset papers as your uncoated workhorses for your everyday print jobs. Opaques are basically Offset papers with a higher opacity and an enhanced brightness and formation. Cost wise they rank slightly higher than Offset papers.
Text & Cover papers, on the other hand, are premium sheets (or fine papers), and are papers of a higher quality. They also carry a higher price tag.
Printers tend to be more hesitant to buy fine papers as they have to buy a full carton of them. Your job might only require half a carton, so if it is a paper very specific to your project, they might end up getting stuck with the rest.
